Yes, I am blogging twice in one day, but I needed to spread the word. Although I haven’t tried this, I am soooo gonna order it soon. I have tried to find it at local stores, but I can only find it online (actually, I just heard that you can buy it at Wal-Mart). Arriba! Salsa Verde
I received this YummY recipe from a coworker. Mi Amiga, Lucy, is a beautiful woman from Mexico. She made this fabulous salsa/dip for one of our staff meetings and I fell in love, so I thought I would share.
A must have before you begin. Make sure you put the ingredients in the blender in this order. First quarter 6 tomatillos and add to blender. Make sure when you select your tomatillos, they are firm.
Next, add 3 jalapenos, roughly chopped. Add as many of the seeds as you like. Remember the more seeds, the more spicy. Also, add one clove of garlic.
Add one handful of cilantro. Just grab the leafy part and twist off. This will blend up, but you can do a rough chop if you’d like.
To give the dip a creamy texture, add one large avocado or two small ones.
Finally, add 1/4 cup of vegetable oil and salt and pepper to taste. NEVER use olive oil or water. Once all the ingredients are in the blender, start mixing. You might have to stop and use a spatula to move the mixture around. This will depend on the power of your blender. When the mixture is nicely pureed, pour into your favorite bowl and serve with your favorite chips.

The Craft Bug Has Hit Again!
So, Campbell’s cute little pre-school teacher Miss Jackie is going on maternity leave tomorrow (Friday). She is having a girl via c-section next Friday. She has the tiniest little bump. She seriously looks about 5 months pregnant. Anyhow, I finally got around to making her a baby gift…nothing like waiting until the last minute. Here are the adorable onesies(if I do say so myself) I made for her.
This one has a cute zebra heart on the bum!
I am totally making this for Emerson. I already ordered Emerson a matching skirt…Surprise, Wesley!
How cute is this little Tushie. I wish I knew how to do this when Emerson was in onesies!
Now, for the next picture, some of you might recognize the skirt. If you remember, I ordered a skirt exactly like this in 2T, but when it came in, I noticed that it didn’t have any elastic in the waist. Well, needless to say, it was way too tight. Since it was a handmade special order, I couldn’t send it back. I absolutely LOVED the skirt and said to myself, “I can make that!” Anyhow, Emerson had a cheap little blue jean skirt my mom picked up somewhere, so I created another one for her.
It’s hard to tell in the picture, but all the ribbon is black, white, pale pink, and hot pink…SOOOO cute! I did all this last night…I think I will take it easy tonight!

Weekend Fun
Wow, even though I still have tomorrow off, this weekend seems to have come and gone. I was extremely busy, but mostly for socializing purposes, so that’s always fun.
Friday started off with a staff social at On the Border. It was nice to unwind with some coworkers sipping on tasty beverages. However, if you know me well at all, you know that once I get started with the fun, I don’t like it to end after just a hour or so….soooooo, I carried the party to my house. Campbell had so much fun too, that this was how he fell asleep.
Saturday came and I had a relaxing day with the family…Wesley has a different view. The kids had cabin fever and were driving him crazy. My friend Emily also got married Saturday night. Beth and I went together while Wes stayed home with the kiddos (it was nice to dance the night away with my girls). Emily was a beautiful bride and her wedding was a ton of fun!
Today (Sunday) started with Campbell and Wes having a father/son day at the movies to see the Chipmunks. Campbell loved it! Emerson and I had so much fun together. It was amazing how calm and ladylike she was without Campbell running around chasing her. Unfortunately, we watched the Cowboys lose miserably. I will say that Minnesota is a tough crowd and Brett Favre is the bomb, but they could have at least showed up and made the game interesting. I will keep my negative opinions about Romo to myself…enough said.
Aside from the Cowboy loss, today was absolutely beautiful . A definite breath of fresh air after living in or near sub-freezing temps for the last couple of weeks. It was too nice not to take advantage, so here are a few pics from the kid’s day outside.
Tomorrow, I don’t have to work, but I will be taking the kids to school. Beth and I are going to Studio Movie Grill to see The Lovely Bones. I cannot wait. It should make for a fun and relaxing day…aside from the baby things I need to make for Campbell’s teacher who goes on maternity leave on Friday…oh and the 7 Aldridge shirts I have left to make…….UGH! Did I have to even bring that up?

Just a Quick Tidbit
I have a lot going on today…I have to finish some Aldridge shirts, make Emerson a couple Valentine’s shirts, and do laundry. However, I did want to take a few seconds to say that this little onion blossom
turned 18 months yesterday. Wow! A year and a half old? Already? She is quite possibly the quirkiest child on the face of the planet. Here is a brief (remember I am on a time limit here) list of things I love about my dear sweet Emmy Mae:
1. She lets me dress her up in the most adorable and ridiculous outfits & and hairware.
2. She loves to clean.. She will spill water on the floor just to be able to clean it up with a towel.
3. She has the funniest attitude…It’s cute now, but will not be in about 10 years.
4. She has the most adorable pig tails.
5. She is a lover…she will squeeze your neck tighter than anyone.
6. She has her daddy wrapped around her chubby little finger.
7. She loves to talk (just like her mom) and I sit and ponder what she is actually saying when she is speaking her Gibberish.
8. She is the social butterfly of her classroom. She greets parents in the mornings and afternoons with “hi” and “bye-bye”.
9. Her figure is the cutest thing about her.
10. She is a mini-me from her looks to her personality.

New Year…New Resolutions!
Okay, so it has seriously been 5 months since I last blogged. I thought that my blogging life was over because of the lack of time I have, but I really thought long and hard about how much I enjoyed it. I read so many blogs and people do so many fun things with theirs, that I want mine to be just as cool. I want to share the happenings of my family, my latest and greatest creations, cool recipes, great buys, neat finds. I want it to be thoughtful and witty. I don’t want to post just to post (the monotony of the same pictures via email, Facebook, and the blog were wearing me out!). Oh, and I want to make an effort to blog at least 3 times a week!

Clearly too much time has passed so I am not going to back track. I am moving forward…full speed ahead!
So with that being said, I am going to share my newest obsession. My mother-in-law gave me the best Christmas present EVER! Before I unpacked ONE SINGLE THING, I made Wesley hang it up in my living room.
