Arriba! Salsa Verde

I received this YummY recipe from a coworker.  Mi Amiga, Lucy, is a beautiful woman from Mexico.  She made this fabulous salsa/dip for one of our staff meetings and I fell in love, so I thought I would share.

A must have before you begin.outside 042 Make sure you put the ingredients in the blender in this order.  First quarter 6 tomatillos and add to blender.  Make sure when you select your tomatillos, they are firm.outside 043outside 044

Next, add 3 jalapenos, roughly chopped.  Add as many of the seeds as you like.  Remember the more seeds, the more spicy.  Also, add one clove of garlic.

Add one handful of cilantro.  Just grab the leafy part and twist off.  This will blend up, but you can do a rough chop if you’d like.

outside 047 To give the dip a creamy texture, add one large avocado or two small ones.outside 048

Finally, add 1/4 cup of vegetable oil and salt and pepper to taste.  NEVER use olive oil or water.  outside 049 Once all the ingredients are in the blender, start mixing.  You might have to stop and use a spatula to move the mixture around.  This will depend on the power of your blender.  When the mixture is nicely pureed, pour into your favorite bowl and serve with your favorite chips.outside 051

That sounds really good! I thought about you and salsa yesterday. LOL! Jason and I went to this salsa place in downtown McKinney. It had tons of different Texas salsas, pickled things, cream cheese things and more. You would love that store.
