So You Think You Can....

Dance Dance Dance
Okay, so I TRIED to have a So You Think You Can Dance party, but Mother Nature had another idea. As I am sure many of you witnessed, storms swept through the metroplex last night. It got so bad up here, I am surprised my house is still standing. In fact, Wesley had to pull over under an over pass on his way home because he swore his truck almost flipped over due to high winds. Thank goodness the party had already started...I had friends there to coax me through the torrential weather. I would have need meds if I was by myself.
Anyhow, so the overly ambitious weathermen were on for the first hour, so we missed the first like 6 couples. It was so not cool, but we had fun anyway! My friend Dawn even stopped by with her new little baby boy Sebastian, Angie (our old counselor) came by with her beautiful daughter Simone, JJ, Kim, Lysa, Meg, Beth....and of course Campbell had to be right in the middle of it all. Great food, plenty of drinks, and even an encore performance of the "unidentified elementary school" staff dance that Beth and I choreographed. We felt it was very fitting to perform and as the dance gods would have it, all FOUR parts were in attendance. So dance we did to Boom, Boom, Pow!

I am attaching pics (Campbell took some) and the FABULOUS stuffed jalapeno recipe that my MIL gave me. I think of myself as a jalapeno connoisseur. I have had them every way possible and these, to me, by far are the best!! ENJOY!!!

STUFFED JALAPENOS
1 lb breakfast sausage (spicy or mild, you choose)
1 small onion (chopped)
10-12 jalapenos (good size)
Cut in 1/2 lengthwise and COMPLETELY seed (or not if you want spice)
8 oz cream cheese (softened)
20-24 slices of Bacon (I use low sodium)
Sautee (sp?) onion and cook sausage in pan. Make sure you break apart sausage into small pieces. Let cool. Mix together sausage and cream cheese in bowl until completely blended. Fill each jalapeno half with sausage mixture and completely wrap with one piece of bacon. Make sure the end of the bacon ends up underneath the jalapeno so it stays wrapped. Bake for about an hour (or until bacon is brown and crisp) at 400. YUMMY! You will never want to eat them any other way!

So coming next time...our FAVORITE show ever...what a great idea to have a party, like Bunco, only better!!! Can you believe that weather made us miss the first hour...suck! But, Darbs and I downloaded them on you tube...and watched before vote off show...we lost the top of our tree in the storm...whoa...crazy weather...Texas spring, here we are!
